Oh god, I can never be happy with what I have. I want a new addition in my kitchen – the sharper the better. I want a new knife!
I currently have an excellent 6.5 inch Shun Santoku knife, that I use ever so often for everything that needs cutting and slicing. I wrote about my knife before too – It was Chef Masayoshi “Masa” Takayama’s no. 1 choice in knives in terms of quality, balance, sharpness and how long it kept its edge. And after 2 years, the knife is still as sharp as the day I first got it with a bit of honing and sharpening
But now. Now, I want to add more santoku knives into my collection. There are millions of Santoku knives from different brands. Keep in mind, Santoku is a method for making knives. There is the classic Wusthof, Global, Shun Steel, Wolfgang Puck, Henckles, and the list goes on and on…but because I have Shun, i am partial to it.
What I am looking for is a smaller knife, a paring knife and/or a boning knife. A fillet knife, I wouldn’t mind either. So far, I have my Shun, a bread knife, a cleaver and half a dozen of cheap hand-me-down knives that I would like to get rid of.

That is a Japanese knife. They made knife with quality, and long lasting.
oooh, i can so identify with you. i love knives too, but cant afford them. had to buy a henckels chef’s knife after watching chef at home go on and on about how must invest in one.
