Refreshing Chickpea Salad

With the weather being unpredictably hot (and wet) these days, all i feel like doing is plonk myself in a large enough fridge with my mohair sweater. But we still have to eat, don’t we? So I am now stocking my fridge with easy and healthy foods that I can grab for lunch without turning on the stove too often.

I present you, my refreshing chickpea salad! It’s great eaten cold or room temperature and there is no cooking involved whatsoever. It’s nutritional and very, very good to eat. :)

You can keep this salad for about 3-4 days. But it doesn’t last that long around here since my partner loves it and eats it for lunch and sometimes dinner…:P

Chickpea Salad Ingredients:
1 Can of chickpeas, drained
1 carrot, diced
a handful of green olives, chopped
1 clove of garlic, minced
1/2 red capsicum
2 stalks of spring onion, chopped
a handful of parsley, chopped finely
2 tablespoons olive oil
1/2 teaspoon salt
Juice from 1/2 lemon
pepper
Method:
1. Drained the chickpeas well and rinse with water. Drain them again and make sure you get rid of most of the water.
2. Add the rest of the ingredients in. Toss to combine.
3. Keep it in the fridge for an hour before eating so you give the flavors time to blend :)

    You can actually use whatever you want in this salad but i like this combo. You know what, I saw Nigella Lawson made this salad with diced up lemons….it must be really sour but somehow, i feel it can be quite refreshing…the salt probably balances it out.
