Sundried Tomatoes and Black Olives Pasta

Pasta is so versatile you can do so much with it. This recipe is my partner’s absolute favorite; he requests it often enough that i make it almost every week. Almost. How i chance upon this recipe is purely by fluke because i was just merely grabbing what i had in my fridge. The result is a pasta dish that has a very balanced and layered flavor in each and every bite. The key is to not overcook the pasta so that a bit of a bite is retained.

The ingredients are really simple and the tastes of this pasta is just simply out of this world. You can make a big batch of this and serve it in a pot luck. I guarantee you, it’ll be gone before the end of the night.

Ingredients for one serving:
1 cup of cooked spiralli pasta (cooked for 8 minutes in salted water), save 1 cup of its cooking water
4 pieces of sundried tomatoes, drained off its oil, chopped
approx. 5-8 black olives, minced
2 cloves of garlic, sliced razor thin
3 tablespoon of homemade marinara sauce
2 tablespoon olive oil
1/2 teaspoon dried basil, rubbed (leave some for sprinkling later)
1 teaspoon sugar
a dash of salt and pepper

Method:
1. Heat oil in pan in medium heat. Add your garlic, olives and tomatoes in, stir the ingredients around before adding your salt, pepper and sugar. Saute for another 5 minutes.
2. Add your homemade marinara sauce and cook it till the liquid starts to simmer down. Add a bit of the pasta in, cook until it boils down and add a bit of pasta water again. Let it simmer until most of the pasta water is gone, add your pasta in.
3. Cook the pasta for about 3 minutes under heat. Serve on a plate and sprinkle some dried basil on top. If you want, add some parmesan on top but you really don’t need it.

To cook more, just double or quadruple the recipe. It’s the most satisfying pasta dish ever and it’s meatless.

    Awww….why does it have to be meatless.

    I cook my pasta till its half-way there. Drain, then I cook them in the sauce till its done.

    A bright and sharp looking pasta! And give me tomato-based pasta anytime :)

    I used these spirals recently too! Spirals are so much easier to eat. Don’t even need a fork like what you need when you eat spaghetti and linguine.

    you can add ayamas roasts on the side if you want with this dish..goes pretty well too :P
