Everybody knows truffles, the queen of all mushrooms. These little delightful fungi however, can only be found in France and Italy and the highest quality truffles, the black Perigords and while alba, could fetch about USD1k-3k per pound. This is not just any ingredient you can find in your grocers, this is a very expensive delicate mushroom with a killer whiff that pigs and humans would hunt for every season and only in those two regions. Although these truffles can sometime look quite ugly, it is a classic case of “Do not judge a book by its cover” which in this case is “Do not judge a ‘shroom by its looks”
However, truffles are about to be available in Canada soon in British Columbia to be exact. I’m dancing with joy.
Yet, the earthy truffle is a luxury food in the same class as caviar and champagne. Traditionally, the highest pedigreed truffles — black Perigords and white Albas — come from France and Italy and sell for more than $1,000 and $3,000 a pound, fluctuating with supply and demand.
But now, B.C. is on the cusp of producing these tuberous divas as a food crop. It fits right into the enviro-friendly 100-Mile Diet philosophy as well as the growing culinary and agro-tourism industry. The spawn of France’s Perigords have been implanted in B.C. trees and the due date is about three years from now. It takes five to 10 years to mature and the first truffieres (truffle farmers) started operating two years ago.
Hey..i’ll be in my 30′s when I can buy these truffles in markets. It’s still under the “soon” category
I don’t know if it will be cheaper now that Canadians don’t need to import truffles from France and Italy but I am keeping my fingers crossed of course. Even if it’s slightly cheaper, it’s still SOMETHING…it’s Truffles. It’ll definitely benefit northwest of US as well when these truffles are out.

granville island market, there is a little spice shop that sells truffles, they are rarely available fresh, but they usually have stock in the freezer.
they are extremely expensive, I opt for the cured ones in a jar.
Hey Pradeep! Yea truffles are expensive. But I am hoping that the price will go down a little bit once Canada’s truffle’s ready
