Me and My Egg Sammy


I love an egg sandwich for lunch. I’ve been sticking to the same recipe for a while now because I really like the flavor of my egg sammy with chopped dill pickle and mayo. The dill pickle just gives it the zesty crunch that I love. Get the good kind of dill pickle, so that’s it’s not SO sour that your face cringes at every bite – not pleasant at all. The pickle is not suppose to overwhelm, it’s suppose to complement and when it’s the right pickle, it does it so well too! I use Bick’s Dill Pickles.

Another thing about egg sammy is the hard boiled egg. Getting your hard boiled egg right is quite essential if you don’t want your egg sandwich to have a dry after taste at each bite. You don’t want to over boil your eggs till when you slit it into half you see a grey ring around your yolk. You want your yolk to remain a sunny yellow and rather moist. And that would be the perfect hardboiled egg…:)

Here’s my Egg Sammy recipe:

2 perfect hard boiled eggs (put room temp eggs into the boiling water and cook for no more than 10 minutes).
1 tablespoon of mayo (use low fat if you’re so inclined)
1 small dill pickle, chopped up rather finely
Salt and pepper to taste
3 slices of bread


Method:
1. Mix mayo and dill pickle.
2. Add eggs and mash them till they are well incorporated with the mayo-pickle mixture.
3. Add salt and pepper to taste.
4. Do a double decker with your 3 slices of bread. I like my bread fresh but you can also toast your bread too!
5. Eat!

    You may wanna add celery if pickle is too sour. The crunch and adds an extra zing. Perfect for tuna salad sanwich too!
