Green Eggs and Ham

Green Eggs and Ham is one of the most beloved children’s book in the world by Dr. Seuss. And what does a children’s book gotta do with my kitchen? Well, only the green eggs part. I had a craving for green food all of a sudden; I wanted to eat kale or kailan in Chinese, baby bok choy with dark green leaves, broccoli, green leafy veggies, green candy, green gum, green everything! And so, just a few days ago, I decided I felt like green eggs and ham sausages (because I don’t have ham) with some ceasar salad and boiled green broccauli (yes broccoli and cauliflower hybrid). It was a very green meal indeed.

Here’s a green yearning,
That ended with a little cooking,
Of a very interesting,
Meal of green egg-lings!

Okay, i tried to make it rhyme since it’s a Dr. Seuss and all. Egg-lings probably didn’t belong there but it helped rhyme my little poem hehe. The eggs are in the center of the platter in case you can’t make out what is what since it’s all green.

Anyway, here’s how I made my eggs green:

Ingredients:

2 eggs
1 tablespoon of pesto*
a dash of pepper and salt to taste
1 quarter red onion

Method:

1. Beat eggs together with the rest of the ingredients and cook as you would an omelette.
2. Serve as it is or together with some ham/sausages (and salad, if you’re having this for dinner *grins*)

*Pesto – pesto in general means a paste in italian. I made my pesto with garlic, chives and fresh parsley. Season generously with salt and a bit of pepper. Blend them together with olive oil until it becomes a paste. Store and keep well.

    That thing looks kinda scary there but that is because I don’t like vegetables mixed with my eggs (vegetables as toppings is fine though. I know I am weird.) I am sure it is pack with all the goodness you can find in vegetables. =) I will definitely try it. It reminds me of fried tomato eggs that my mum had in China

    Well, the broccoli+cauliflower hybrid has many names here it seems. In my nearest hypermarket it’s broccauli and in the chinese store it’s broccoflower…*shrugs* whatever man…as long as it tastes good, eh? hehe..
